Sugar is a sweetening agent easily and always available in our kitchen.  It contains soluble carbohydrates. Sweet carbohydrates are present in almost all types of cereals in some amount. But, the sugar crystals we eat is regularly is derived from processing sugarcane juice. Making sugar in this way is prevalent since ages.

Simple Sugars are called Monosaccharides and contain Glucose,, fructose and Galactose.

Types of Sugars

There are several types of sugars available. People around the world have different likings for variant types of sugars. In India, jaggery and white sugar are very commonly used.

1.    Table or Granule Sugar
This is the most commonly used sugar. It is white in color and is in the form of small even granules.

2.    Castor Sugar
Castor Sugar is superfine white sugar. It dissolves easily and quickly than the standard granule sugar. It is used in making syrups and cocktails.

3.    Confectioner’s Sugar
This is a powdered form of sugar. A small amount of cornstarch is added to it to prevent it from clumping. It is also known as Icing Sugar. It is used for decorating cakes and bakery foods.
 4.    Pearl Sugar
This is an opaque, hard form of sugar. It does not change its shape even when exposed to high temperatures. It is used for decorating cookies and buns.
5.    Sanding Sugar
It is also used for decorating bakery items and cookies. It is in the form of large crystals often used to add an extra crunch to the food. It is available in the rainbow of colors.

Unlike granule sugar, which is derived from sugarcane or sugar beets, this type of sugar is derived solely from sugarcane.

This is an unrefined raw form of cane sugar. It is used to sweeten tea or coffee by people who have a different taste.

It is again an unrefined form of cane sugar in small and big brown color crystals. It is famous for its caramel flavor.
9.    Muscovado sugar
It is an unrefined form of sugar with a sticky, wet and sandy texture. It is used as a substitute for brown sugar as its flavor is very strong and typical.
10.  Light Brown Sugar
This is a light color raw sugar with a tinge of molasses added in it for a delicate caramel flavor.
